Meal prep via Shef

I cook for chef-to-home meal platform Shef in Seattle, preparing meals weekly for folks who order my dishes via Shef’s app, and delivering them to Shef which handles final-mile delivery to diners’ homes. I offer Southern (and soon, Southwestern) cuisine, all of it gluten-free, with several dairy-free, vegetarian, and vegan options.

Omnivorous options

Carolina Gold pork bbq

This is my most popular dish. Slow-cooked pork shoulder comes bathed in a tart North Carolina mustard-based barbecue sauce, and accompanied by a vinaigrette-dressed poppyseed slaw and pickled corn with scallions.

Jambalaya with chicken

Chicken thighs and andouille pork sausage share the stage in this classic jambalaya. Prepared with fresh veggies, tomatoes, rice, and classic creole spices, you'll relish the depth of flavor and friendly spice in every bite.

Pecan rice & peach chicken

Roasted chicken thighs with a smoky peach sauce are sided with a wild rice salad made with diced pecans, dried fruit, and savory herbs for a satisfying summer dinnertime dish.

Creamy corn pudding

If cornbread and mac & cheese had a baby, it might be this corn pudding. Here, corn is suspended in a pillowy cloud of cheesy goodness, but strengthened with a little starch. It's a great pairing with any protein, or a sturdy light meal alongside a hearty salad or veggie..

Dry rub drumsticks

Sweet heat-rubbed chicken drumsticks and colorful corn succotash pair up for a meal that diners of all ages relish. Tastes great hot, but also gives big picnic energy for cold lunches on the go, at school, or at the office.

Refried black-eyed peas

Savory black-eyed peas seasoned with smoky spices are twice-cooked (the second time with a touch of spicy pork fat) and whipped into refried goodness. Enjoy these beans with an entree, under an egg, or atop a crunchy corn chip.

Vegan dishes

Peanut stew with greens

Sweet potato, greens, and warming spices share a savory peanut broth in this spin on an African ground nut stew, which is plated with greens and brown rice and topped with roasted garbanzos and peanuts for crunch.

Carolina Gold tofu bowl

Oven-fried tofu dressed with tart Carolina Gold barbecue sauce is sided with brown rice, herbaceous succotash, and spring onion garnish for a complete vegan meal.

Pecan rice & peachy tofu

Oven-fried tofu bathed in a smoky peach sauce is sided with a wild rice salad made with diced pecans, dried fruit, and savory herbs and spices for a sweet and savory summertime main.

Hoppin’ John salad

This hot-weather Hoppin' John pairs black-eyed peas with brown rice and a variety of vegetables and herbs, with just a hint of kick, for a vegan summer main packed with powerhouse nutrition.

Hoppin’ John with greens

This Hoppin' John delivers all the smoky flavor of its carnivore cousin with nary a ham hock in sight. Instead, black eyed peas are simmered with vegetables, tomatoes, bay leaves, and smoky spices, then paired with spicy collard greens and rice for a well-rounded meal.

Coconut-braised collards

Fresh collard greens braised in coconut milk, ginger, and aromatics liven up any meal and bring both a mildly peppery kick and powerhouse nutrition to any plate.
